For the turkey, should be between 20 - 25 minutes per pound. About 20 minutes per pound for the ham, if memory serves. This is after your smoker comes up to temp and you start to see smoke from your smoke chips/chunks.At about 20 minutes per pound, take the temp of the ham and turkey with a good instant read meat thermometer.Also, I generally don't use water in the water pan for hams and turkeys, but that is a personal preference. If you put water in your pan, it'll probably take a few more minutes per pound.Pat

Cooking Time I bought the Masterbuilt Vertical Gas Smoker and the Manual is not very helpful. I'm trying to figure out cooking times for multiple racks of food. In other words, if I put just one rack of ribs on one grate, is it the same cooking time as if I put 4 racks of ribs on 4 grates? And should I rotate the grates? Any help would be appreciated. Google "Smokering" and you will find a lot of forums dedicated to smoking food. It is an art in itself but many of these forums are helpful in learning. The answer to your question is basically put as many racks of ribs that fit without touching and as long as the temperature is maintained they will all cook at the same time. I typically smoke my ribs at 225 for 4-5 hours.

I just bought the double doored Brinkmann Vertical, and was wondering if I need to spray down with oil and burn one time before cooking? Any help would be appreciated.


I would do that. It will undoubtedly smoke some the first time you use it, as the paint and oils on the pieces burn off. You want your food to taste like wood smoke, not paint smoke. I would leave the racks out and just wash them before you use them. Happy smokin'
