Electric water smoker low heat

I've had a series of problems with my electric smoker. Fundamentally, I can't seem to get past 200 degrees in heat, and often the heat just goes off. Originally, I thought I had a short in the element, so i got a new one of those. But they I started noticing sparks coming out of the thermostat so I got a replacement thermostat, but same problem, although at least i could hold the heat at 180 or so. Maybe both the element and the thermostat were out. Thoughts?

Electric water smoker low heat

I have used the charbroil bullet electric H2O smokers for years (wore 2 out - currently on my 3rd). I won't use anything else (having used many, many others - HOWEVER - as with every product made there are things to watch or overcome. Learn to use it properly and look forward to many years of great BBQ. Ambient (outside) air temp below 70 (depending on wind also) will affect these smokers drastically - highly recomend getting or making a "smoker blanket" (got mine at cabelas years back - if you can't find one welding blankets from an industrial supply store can be made into one) to insulate the sides - this drastically reduces heat loss and reduces the electrical load. Another MAJOR mistake many people make is extension cords - avoid the use of them at all if possible - if not possible then purchase the heaviest gauge you can find. Always pre-heat your smoker - Always use boiling water (or other liquid) in the H2O pan added after smoker is pre-heated - Always minimize opening the smoker once cooking has begun. The heater element can be cleaned when cold with a very mild detergent and room temp water. If you have the large 2 rack but are only smoking enough to use a small amount of rack space on only one rack remember that you are heating a whole lot of air - i have a couple (different size) wood boxes wrapped in foil to take up excess air space - this means less air volume to be heated and better heat control - DO NOT use cardboard boxes or other low temp combustable items in the box construction! Make sure the house outlet you are plugging into is a 3-prong GROUNDED outlet. Finally, make sure your smoker is level and remember there can be up to a 20 degree cooking temp swing in temp between the bottom rack and top rack (top rack 5-20 degrees hotter than bottom). The heater element will cycle on and off during normal use. Good smoking and enjoy.

Don't know where to put wood chunks in a Char-broil electric h20 smoker!!

Dip wood chips/chunks in boiling hot water for a few minutes if you're in a hurry or allow to to soak in tap water for about an hour if you have plenty of time. Either way, place the soaked chips around and under the heating element at the bottom. Don't throw out the water; heat it up and pour it in the water pan. Heating it up to boil will give your smoker a good head start. I've been doing that on my char-broil smoker for years.

Where do i put my wood chips? under the heating

Buy some lava rocks from your local hardware store. Get just enough to cover the coil with 1 layer of rocks. This will help control and retain the heat produced by the coil. Now, just throw a couple chunks of pre-soaked wood on top. I recommend hickory or cherry...never mesquite, it is way too harsh for slow smoking. Happy smoking!

Low temperature I can not seem to get the smoker temperature over 220 degrees. I used the water pan method with 13 lb turkey & even after 12 hours, the bird still wasn't done. This also happened with salmon but the outside temperature was cool. The temperature when the turkey was smoked was 80 degrees. I must be doing something simple wrong. I opened the door to add air to the chamber, the heat stayed the same. Please help as my BBQ reputation is on the line. Ann P.

I have the same smoker but not this problem. Is it possible that you have not let the coal get hot enough prior to putting your meat in it. When I feel that the temp is not hot enough I try to leave a little crack with the lid to allow air to flow from bottom to top stoking the coal. When you get the nack of it, this thing cooks an awesome turkey.

My electric digital smoker wont heat. The timer works fine and the temp sets fine, but the element will not heat up . LAst use was the same problem then it eventually came on after some jostling of the chip tray and other parts. Is there ome kind of safety mechanism preventing the element from heating up due to loader or tray position?

Hi tee1134400... Check all your connections going to the heating element...sometimes they will get corrosion on them and cause them not to function properly. Please take time to rate me
