Make sure the vents are open both on the side and chimney. If you are using as bbq light fire in the large section.The small section is for cold smoking as the heat sorce is further away.I have a brinkman myself and use it regular for smoking mackerel but have only have the large section and not the add on small box. Start as a normal bbq with bricket coals and bbq lighter fluid with both vents open. Leave for twenty mins to become ash covered this eliminates oil taste in food as it is burnt off before food is put in.Then put in oak chippings or beech, hickory,or as I find a mixture of apple and oak to be the best I use strips of wet toweling to put around main lid when closed keeping more smoke in the main box.Keep main vent half open on the left of drum and regulate air flow from vent on chimny stack only open half inch or so.If you want to get a heat bust open lid and put over coals shavings rather than woodchips this will egnite an as soon as it does shut lid down again and watch temp rise. Mine goes upto 3oo deg and settles at about 250 deg. Repeat shavings every ten mins or so to keep temps up.Fish is done perfect in about 45 mins

I don't think this wold be a problem with someone who knew how to use this, but where does the food go when using the smoker? I surmise the charcoal goes in the little firebox and the food in the main BBQ drum. - I don't have a manual with my BBQ smoker and have never encountered one of these BBQs before.

Not enough heat

That's the problem with water smokers. The energy from the heat source is being absorbed by the water to heat it up to the boiling point. The cooler the water, the more energy is absorbed. You can start with hot water, or just not use any water. And yes, getting the coals off the bottom on the pan with a grate allows for the coals to heat more evenly. Also, I would not slow smoke veggies with the meat, they turn out best cooked directly over a hot fire (a little olive oil, salt, and pepper first)

I turn on bbq it lights, put temp settig to high but only get a low flame on all 4 burners,tank is full,what could be the problem? it has worked fine until this time i used it, it is a uniflame bbq about 2 to 3 years old.

BBQ lights but gas does not travel down burner bar.. The flame only lights at the jet area..

Turn off the LP Gas Tank Valve. Disconnect (unscrew) the grill hose from the tank. Wait 5 minutes and reattach the hose to the tank. Turn the tank valve on very very slowly, until it's fully open. Then try lighting each burner one at a time. If that solves your problem remember to turn the tank valve on very very slowly if you turn it off after each use or after replacing the tank.If that didn't solve your problem, you'll need to remove the burners and check for any obstructions and clean the burners while you have them out.Please let me know if that solved the problem.
