Frustrated-please help !!!!!!!!!!!!!!

Having difficulty maintaining heat in the ideal range on the gauge and cooking food up to temperature. we have to finish things in the oven. Gauge stays in the warm range. We do know that the gauge does work because we lit behind it with a lighter and it moves fine up to hot range. once the charcoal is in white ash range, we add more charcoal like it says in the instruction manual and open little door. We can see the flame but the gauge never gets up to ideal range. please help

I have the charcoal brinkman smoke n grill, had the same problem until i found the grill they are working on is a little different from mine but i used the same idea and added 4 holes in the bottom of the charcoal bowl with a 9/16 bit. This will fix your temp problems but will give you another one......the charcoal ash falls on the ground. To fix this i went to Lowes and bought a 24" water heater pan to sit the grill in to catch all of the ash. Also I found the weber charcoal grate at my Ace Hardware here in Cypress Tx. Good luck!!

Where are the 3 holes at? I have one like the one you purchased and my lid didn't hold on tight either. You have to really try and force it on and after using it for a while it will fit snug. The heat helps it set better after a while.

Low temperature I can not seem to get the smoker temperature over 220 degrees. I used the water pan method with 13 lb turkey & even after 12 hours, the bird still wasn't done. This also happened with salmon but the outside temperature was cool. The temperature when the turkey was smoked was 80 degrees. I must be doing something simple wrong. I opened the door to add air to the chamber, the heat stayed the same. Please help as my BBQ reputation is on the line. Ann P.

I have the same smoker but not this problem. Is it possible that you have not let the coal get hot enough prior to putting your meat in it. When I feel that the temp is not hot enough I try to leave a little crack with the lid to allow air to flow from bottom to top stoking the coal. When you get the nack of it, this thing cooks an awesome turkey.

Have this smoker but really dont no how to use it where do i put the wood chips do i put them in the pan with the water our do i put them on the plate please help me with this

Page 3 on this link shows the wood tray and explains the water tray. Wood chips are soaked to make them last. They will still go pretty fast but you can add more. Soak the chips or chunks overnight.

Not enough heat

That's the problem with water smokers. The energy from the heat source is being absorbed by the water to heat it up to the boiling point. The cooler the water, the more energy is absorbed. You can start with hot water, or just not use any water. And yes, getting the coals off the bottom on the pan with a grate allows for the coals to heat more evenly. Also, I would not slow smoke veggies with the meat, they turn out best cooked directly over a hot fire (a little olive oil, salt, and pepper first)
