New Braunfels Bandera Smoker instructions for use

I have purchased a second hand New Braunfels bandera Smoker here in Queensland, Australia. There was no intructions with it and the people that it was purchased from also did not use it or know much about it. It is very different to smokers we have here in Australia, but i am keen to get it going. Any assistance would be grateful. Email address is [email protected]

I have that same smoker. it is very easy to use u just have the fire box waterpan,smokehouse,racks and air vents. i start out with a little pile of wood(apple,cherry,oak,hickory,mesquite)and some newspaper to get the fire started. then u fill your water pan about a third of the way. close it up and get it to the right temp depending on what u r cooking. the key is getting good ventilation to make sure your meat is not over smoked. then just monitor your temp till your meat is done. anymore questions email me at [email protected]

I have purchased a used upright New Braunfels Smoker and need an instruction manual on how to use it, ie. how much charcoal, cooking times, etc.

Fill it almost half way spread it evenly and make sure the coal is fully fired before you but any meat in. If charcoal still burning not fully fire and red do not put any meat in the grill. Cooking will depend on what you cooked and quantity of meat. The more the meat the longer it will take. My suggestion is to keep your eyes on what your cooking and if need to pull the meat out and test it if needs to. By testing the meat here and there paying attention with hands on will give you and idea how your grill works. everyone cook or smoke differently, some like it juicy and other like it juicy/dry or fully cooked. Buying a grill is like having a new girlfriend, you have to get the feel to know that person. Smoking will take a bit longer than standard grilling. Hope that help some..enjoy!

Where does the charcoal go?

Please clarify your problem, i am providing only general solution, any "contraption" of that type is divided into several sections, on the very bottom is ash container, above is fire and at the very top is food compartment. food compartment is usually insulated from direc a fire you can use any "sweet" hardwood, any fruit tree cuttings, branches, kindlings are fine, so is hickory, oak will turn food bitter, do not use it then, do not use mapple, birch or ivy either, they will turn food very sour, do not ever use grass, pine or similar, they do spoil food acrid and turn smokehouse acrid for very long not allow vigorous fire as this will raise temperature to high and you will be baking not smoking!as a rule of thumb, per 1000g of mass is required 1h of smoking, temperature, depending on meat/product (you can smoke cheese, fruits and others!) should be between 60centigrade and 85 centigrade, lower the temperature (optimal for virtually everything is about 72 to 75 centigrade), better product and better taste, but extended time!prepare your meat according to favourite recipy, smoke, prepare pot with boiling water, immediatelly after removal from smoke, immerse your meat (especially susages for about 10 sec into boiling water, allow to dry and store in coolroom or dry it above your "normal" cooking stove in your kitchen, it will not spoil, it will just become more, how to care, afte smoking, empty ash and fire "department", wipe clean all working surfaces, prevent from direct rain, you can use bit of lard ot grease food compartment, but it is not necessary, experience will teach you more :-)

Need an instruction manual

It sounds like you have an "offset smoker". The fire goes in in the firebox (the small offset box). If you have a rack that fits in the firebox, you can put that in there too and use it to grill. Go to and click on "instruction manuals" and find the manual for the one that looks the most like yours. Char-Broil took over New Braunfels a few years ago. Once you have it assembled, there are huge resources on the web on how to use it. Personally I rarely use charcoal, I prefer the taste of cooking with Pecan wood - if you live in Texas you can buy a 50lb bag at Academy for about 10 bucks. I grill over the firebox part directly (although I often close all the dampers and let the meat smoke a little while cooking). A few times a year I'll smoke a turkey or other meat in the main chamber, keeping the fire in teh firebox.

Have a brinkman all in one smoker but no instructions on how to use it

Put the briquettes in the bottom pan and put the wood chips around the outside edge. Put water in the top pan. All this must be done before you light the charcoal. Using an electric lighter works best and won't change the flavor of your food like starter fluid will. After coals are lit, place meat on rack and seal everything up. Now you're Smokin'!

New electric smoker no instructions!

Put some water soaked hickory chips and some liquid smoke with chicken stock or pinot grigio wine or both in the pan above the heater element. Put yer rubbed and marinated meat in top above the wood mix. Plug it in. Pop a top on a cold brew of yer choice. :D The idea here is low and slow. You want the meat to be at or around 200 and the smoke to flavor the meat. This ain't no grill in 30 and eat, it is a low and slow smoker. It takes all night or day to cook stuff correctly. Low and slow my nizzle :D Party on! What time do we eat? Saturday? You betta get started. LOL
